Couscous Stuffed Peppers
I’m throwing it back this Thursday with a nostalgic childhood meal I recently cooked that’s now become one of my adulthood faves: couscous stuffed peppers - click below to see the final product! I especially love this dinner because it’s easy, tasty, colorful and makes for great leftovers (always a bonus!). You can also swap any of the ingredients to adapt it to your preferences (i.e., you can use a different type of cheese, dried fruit, grain, etc)… or make it vegetarian by using a ground meat alternative. I use more couscous because I find I need more #carbsthan what’s suggested to be satisfied. The recipe is pasted below for anyone that wants to give it a go! 🥘 🌶 😍 #TBT #ThanksMom How to Make It Step 1 Brown ½ pound ground beef. Cook ½ cup couscous according to the package directions. Step 2 Mix the beef, couscous, 4 sliced scallions, 1 cup crumbled Feta, and ½ cup chopped dried apricots; season with salt and pepper. Step 3 Stuff into 4 hollowed-out bell peppers and bake at 400° F, covered, until tender, 45 to 50 minutes.
